I've found a "Intro" documentation on customizing Cassiopeia, but I really need something with more details so I can get a new site up.

I suppose you should provide us with a specific list of task so that we can advise something.

For example, if we are talking about site appearance, design, then for this it does not exist and cannot exist for many significant guidelines.

All you need to create any appearance in any template (include Cassiopea) is Dev Tools of ypur browser and CSS/HTML sometimes JS skills. And a general understanding of the template files structure so that you can know in which file you should edit the code.
